Well, apparently if we all end up in a nuclear bunker with nothing but food storage items this is the cake that we will be making and eating. At first, I will admit I was slightly grossed out by the name of it, but after reading that a zucchini is 85% carbohydrate and really good for you and your kids I started to understand the method behind the madness and realised that this cake is in face born of pure genius! No matter what way I look at this bundt cake it makes me feel hungry, but when I found out it has a strawberry cream cheese frosting it sent me into drool overdrive! If there is one thing I love its anything made with strawberries and fruit doesn’t get much better.

  2. Oh no, please don’t stop. I love seeing all these clever creations. Maybe the dieters should try holding their breath so they don’t inhale calories while they’re looking!

  3. I scrolled back up to look at the “bad” strawberry and in my opinion, it isn’t bad, just a deep red color.

  4. Squash (which includes zucchini, courgette) can be quite versatile in the kitchen. It does not have a strong character and therefore you can make it as you like, sweet or savory.

  5. You are right about Frikadeller. I make them in another version with cuttet chickenmeat, which is without so much fat and very tasty too. Have a nice day.

  6. beetroot chocolate cake…that inspires me to do a top 10, I think I need to stop posting these top 10 cake ones, there have been quite a few complaints. (people on diets) Maybe change paths or something.

  7. I can’t believe nobody has mentioned the less than desirable looking strawberry on #4. That cake looks so good but I can’t get past that bad strawberry front and center. Sorry to throw out a negative, but perhaps that could be a top 10 list. Top 10 photo fails. Though maybe you’ve done that and I missed it.

    All the rest looked great. (so did #4, just flick the bad berry off to the side)

  10. Now, how on earth can I try to stick to healthy eating when you keep posting this stuff?! Oh, wait, zucchini is healthy! I used to make the best zucchini bread with a cream cheese icing and I must admit it was absolutely delish! So, I’m sure this zucchini bundt cake is too. They all look too yummy. I really like the mini ones — I think I’d eat more! HA!

  11. I’ve heard of zucchini chocolate cake and you can also make a beetroot chocolate cake which absolutely luscious. These cakes are so pretty. I love the green of the pistachio cake and the strawberry frosting looks good enough to eat on its own. I love getting my cake fix here Russell.

  13. There is a store near me called ‘Nothing Bundt Cake.’ Of course, they only sell bundt cakes! I’ve never been inside, but if they sold #5, I’d be very tempted.

  15. My mom makes a chocolate zucchini cake, though not in a bundt pan. The zucchini is shredded and you hardly notice it. It is a very moist chocolatey yummy cake.

    The mini lemon basil cakes look interesting and I may have to try making some since I have two mini bundt pans that hardly ever get used.

  18. Zucchinii???? in a cake???? I don’t like the idea of carrots in a cake. But zucchinis? Even stranger.
