Well, apparently if we all end up in a nuclear bunker with nothing but food storage items this is the cake that we will be making and eating. Made from a bean puree it is strangely not only low in fat but also full of fibre and protein! Wonder what it tastes like? At first, I will admit I was slightly grossed out by the name of it, but after reading that a zucchini is 85% carbohydrate and really good for you and your kids I started to understand the method behind the madness and realised that this cake is in face born of pure genius!
